Oven Baked Fried Chicken


  • 3 lb. fryer chicken cut up
  • 114   c. butter
  • 1/2   c. flour
  • Salt and pepper
  • 1 /4   c. shortening


  1. Preheat oven to 425 degrees.
  2. Wash chicken an d pat dry.
  3. Melt the butter an d shortening together in the oven in a 13x9x2-in. baking dish.
  4. In a medium-sized bowl, mix together flour, salt, and pepper.
  5. Coat chicken pieces in flour an d arrange skin side down in the baking dish.
  6. Bake,  uncovered, for 30 minutes.
  7. Turn chicken pieces over and cook for another 30 minutes.
