Down-Under Cantaloupe Bread Recipe

Ingredients:

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 3 teaspoons vanilla
  • 1 ripe cantaloupe (2 cups puree)
  • 3 cups flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1 cup nuts

Instructions:

  1. Beat eggs, then add oil, sugar and vanilla.
  2. Cut chunks of cantaloupe and put in blender to puree.
  3. Add 2 cups puree to egg mixture; add remaining ingredients and mix well.
  4. Pour into greased and flour 9×5 inch pan.
  5. Bake at 325 degrees for 1 hour.
