- 3 eggs
- 1 cup oil
- 2 cups sugar
- 3 teaspoons vanilla
- 1 ripe cantaloupe (2 cups puree)
- 3 cups flour
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1 cup nuts
- Beat eggs, then add oil, sugar and vanilla.
- Cut chunks of cantaloupe and put in blender to puree.
- Add 2 cups puree to egg mixture; add remaining ingredients and mix well.
- Pour into greased and flour 9×5 inch pan.
- Bake at 325 degrees for 1 hour.
