Baking Quick Breads In The Microwave

Ingredients:

  • 1 cup fl our
  • 1 egg, beaten
  • 1 cup corn meal
  • 114 cup margarine
  • 4 tsp. baking powder
  • 1 cup of water
  • Pinch or two of salt
  • 114   cup PLUS 2 tablespoons sugar

Instructions:

Mix all ingredients together. Pour into a sprayed microwaveable dish (and you will need the lid).
Set the microwave timer to: Cook covered 8 minutes on Medium, 8 minutes on Medium High, and
Then UNCOVER and microwave on High for 60 seconds or 1 minute, remove from microwave and cover. Place on a hot pad and cover with a heavy dish towel. The corn bread will stay warm for several hours. The corn bread came out soil light.
